We separate items as best we can, but there is always a possibility of cross-contamination – our bakery is small!

Gluten:
flourless or gluten-free?
Each flour we use – namely wheat, rye, spelt – contains gluten, and the air inside the bakery has trace amounts of flour. So even if there's no flour in a product as an ingredient, the product may still contain trace amounts of gluten. That's why we call any item without flour "flourless" rather than "gluten-free."
Do you have a gluten intolerance or Celiac disease?
We cannot guarantee that cross contamination with flour did not occur, and therefore would not recommend eating our products.
Avoiding gluten as a dietary preference?
Three pastries in our regular production are flourless:

As for bread, well, gluten is our specialty! To make a gluten-free bread, different ingredients and techniques must be used. And we'll leave that to the other professionals.
Dairy
Almost all of our pastries contain at least one dairy product. Butter, buttermilk, whole milk, heavy cream, cream cheese, and sour cream are ingredients that we use all the time.
There are three pastries in our regular production that don't contain dairy:

Most of our breads, on the other hand, don't include dairy! Look for a blue dot on our bread signs: if there is one, that tells you the bread contains some form of dairy.

Eggs
Most of our pastries contain eggs.
Though our croissants don't have eggs as an ingredient, they do get an egg wash.
The following daily pastries don't contain eggs as an ingredient:

Tree Nuts & Peanuts
We use almonds, walnuts, hazelnuts, pecans, cashews, and pistachios.
Peanuts are not used as an ingredient.
Look for an asterisk (*) on our bread and pastry signs: this tells you the item contains nuts. If the nut is not in the name of the product, we do our best to include it on the sign!
A few loaves of bread containing tree nuts are baked directly on our hearth oven. So if a bread without nuts is baked on our hearth, there's always a possibility of cross-contamination.
Other breads that are baked in pan loaf molds or in our convection ovens (e.g. Pain de Mie, Potato Rolls) don't touch the hearth oven surface, so may be a better option for someone with an allergy.

Soy
Some of our chocolates contain soy lecithin as an emulsifier.
The cooking spray we use also contains soy, so anything baked in a pan loaf, cake mold, tart ring, etc., will contain trace amounts of soy.
Sesame
You can find sesame seeds on quite a number of our breads and some pastries.
Many sesame-containing breads are baked directly on the surface of our hearth oven. So if a bread without sesame is baked on our hearth, there's always a possibility of cross-contamination.
Other breads that are baked in pan loaf molds or in our convection ovens (e.g. Pain de Mie, Potato Rolls) don't touch the hearth oven surface, so may be a better option for someone with an allergy.
